Recipe Save – Pineapple Almond Cheeseball

Recipe Origin: My friend, Frankie and then adjusted to my preference

  • 2 pkgs. (8 oz .) softened cream cheese
  • 1 (8 oz. ) can crushed pineapple (well drained)
  • 1/4 c. Minced onion (can use 1 Tbspn of dehydrated onion flakes in a pinch)
  • 1/2 Sm. green pepper, chopped
  • 1/2 Sm. red pepper, chopped
  • Sparse tbsp. seasoned salt
  • 1 c. Almond slivers
  • 1 c. Almond slices


  1. Put almond slivers in a food processor and blend until nuts are ground; add pineapple (set juice aside to adjust consistency upon final mixing), bell pepper, onion and seasoned salt.
  2. Process until well blended. In a large bowl combine the mixture with the softened cream cheese by hand.
  3. Add pineapple juice if you need to adjust the consistency.
  4. Cover and chill at least 3 hours or overnight.
  5. Shape into one large ball, or divide mixture in half and shape into two small balls.
  6. Roll in almond slices.
  7. Wrap and chill until serving time. (Or wrap in moisture proof and vapor proof wrap; label and freeze. To serve, thaw 24 hours in the refrigerator.)
  8. Serve with crackers and/or fresh vegetables.
