Recipe Save – Amish Friendship Bread Starter

Ever wanted to start the starter mix for friendship bread? I did, so I hunted down the recipe. 🙂

Recipe Origin: Found on the internet…I somehow doubt it originated with the Amish but I could be mistaken.

Ingredients

  • 3 cup Sugar
  • 3 cup Milk
  • 3 cup Flour

Preparation

  1. Combine ingredients in a large bowl.
  2. Cover lightly or put into a ziploc bag. If the container has a lid, leave it slightly open. Store at room temperature.
  3. Stir or squish every day for 17 days.
  4. On the 18th day do nothing.
  5. On the 19, 20 and 21, stir or squish.
  6. On day 22 stir and add 1 cup flour, 1 cup sugar and 1 cup milk. Stir/squish again.
  7. On days 23, 24, 25 and 26 stir/squish.
  8. On day 27, add 1 cup flour, 1 cup milk and 1 cup sugar. Stir/squish.

You should have about 4 cups starter. Give 1 cup each to two friends (with instructions below) and keep the remaining two cups for yourself.

  1. Do not use a metal spoon for mixing.
  2. Do not refrigerate.*
  3. If air fills the bag, burp it out.
  4. It is normal for batter to bubble and ferment.

Day 1 – Do nothing, just place the bag on your kitchen counter.
Day 2 – Squeeze bag several times throughout the day.
Day 3 – Squeeze bag several times throughout the day.
Day 4 – Squeeze bag several times throughout the day.
Day 5 – Squeeze bag several times throughout the day.
Day 6 – Add 1 cup flour, 1 cup milk, 1 cup sugar. Squeeze bag.
Day 7 – Squeeze bag several times throughout the day.
Day 8 – Squeeze bag several times throughout the day.
Day 9 – Squeeze bag several times throughout the day.
Day 10 – In a large non-metal bowl, combine the batter with the following:
1 cup milk, 1 cup sugar, and 1 cup flour. Mix with a non-metal spoon. Pour 1 cup of this batter into each of the 4 1-gallon resealable bags. Give these away to friends or relatives with these same instructions.

To the remaining batter in the bowl, add:

  • 1 cup oil
  • 1 cup sugar
  • ½ tsp baking soda
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 2 cups flour
  • ½ cup milk
  • 3 large eggs
  • 1 large box of instant vanilla pudding (or 2 small boxes)
  • ½ tsp salt

In a separate bowl, mix 3 tbsp sugar with 1 tsp cinnamon and sprinkle into 2 well greased bread pans before pouring batter into the pans. Bake at 325 degrees for 55-60 minutes. Check with a toothpick. Let stand 10 minutes before removing from the pan. Enjoy!

Optional Ingredients: You may add 1 cup of chopped nuts, raisins, chocolate chips, coconut, poppy seeds, etc.
