This microwave meatloaf is better than any baked meatloaf I have ever had. My hubby isn’t a mushroom fan, so I just leave them out of his half. You can leave them out all together, if you like

Ingredients
- 2 slices Fresh bread (cut into cubes)
- 1/3 cup Milk
- 1 tbsp Worcestershire sauce
- ½ cup Parmesan (powdered)
- ½ tsp Garlic powder
- 1 tsp Salt
- ¼ tsp Pepper
- 2 Eggs
- 2 lbs Ground beef
- 1 can Drained mushrooms (optional)
- 4 tbsp Catsup
- 4 tbsp Brown sugar splenda
- 2 tsp Mustard
Preparation
- In a large bowl combine bread cubes, milk, Worcestershire sauce, parmesan, garlic powder, salt & pepper. Add eggs & mix. Add ground beef, mushrooms & combine with hands. Put into a microwave bundt pan (or cake pan with upside down glass in the center).
- In separate bowl combine all ingredients for glaze and mix well.
- Top meatloaf with glaze and cook for 15 minutes on high. Check and continue cook in 5 minute intervals until corners are done. When the meat is done, poor out excess grease & serve.
Cook’s Notes
I use a turkey baster to suck out the excess grease.
