Recipe – Jen’s Enchiladas

Easy and delicious beef enchiladas.

  • 1 Onion (diced)
  • 1 lb Ground beef
  • 1 pkg Taco seasoning
  • 1 can Refried beans
  • Cooking spray
  • 1 pkg Large tortillas
  • 2 pkg Shredded colby jack cheese
  • 2 cans Old El Paso Enchilada sauce
  • 1 can Slice black olives
  • Sour cream


  1. Preheat oven to 350.
  2. Brown the hamburger with the onion and taco seasoning. Drain excess grease. Add refried beans to taco meat and cook until warm.
  3. Lightly spray a 9×13 pan.
  4. Spread the meat mixture and 1-2 tbsp shredded cheese into the center of a tortilla and roll into burrito shape.
  5. Line the pan with the enchiladas side by side. Cover the enchiladas with the enchilada sause. Put remaining cheese and slice black olives on top. Bake until cheese is melted and sauce is a little bubbly; about 20-30 minutes.
  6. Serve individual enchiladas topped with sour cream.
