Recipe – Spicy Southwestern Vegetable Soup

Origin:  Modified recipe found on internet Total Preparation Time: 20 minutes Actual Cooking Time: 40 minutes Number of Servings: 8 Ingredients

  • 2 tbsps oil
  • 1 onion (diced)
  • 1 bell pepper (minced)
  • 6 cups of broth (vegetable or chicken work best)
  • 1/2 cabbage head (chopped or shredded)
  • 3-4 carrots (sliced)
  • 1 turnip (diced)
  • 28 ozs diced tomatoes
  • 14 ozs black beans
  • 14 ozs corn (kernel)
  • 4 ozs green chilies (diced)
  • salt
  • pepper
  • 2 tbsps cumin
  • 1 tbsp chili powder
  • hot pepper sauce


  1. Heat the oil in the bottom of a soup pot. Cook the onions and bell pepper in the oil until tender.
  2. Add the broth, cabbage, carrots, turnip, tomatoes, beans and corn. Stir and bring to a boil.  Continue to simmer until vegetable are tender.
  3. Add the chiles, salt and pepper, cumin, chili powder and hot pepper sauce. Stir.
  4. Simmer for 15 minutes.
