Recipe Save: Eggs Benedict Casserole

  • Cooking spray
  • 1 Bag of frozen shredded hash browns (browned till crispy)
  • 8 half English muffins (lightly toasted)
  • At least 8 slices of deli ham
  • At least 8 slices of Swiss cheese
  • 8 scrambled eggs
  • 2 envelopes of Knorr hollandaise sauce (prepared per instructions on package)


  1. Preheat oven to 350 degrees
  2. Spray 9 x 13 cake type pan with Pam.
  3. Layer hash browns, ½ English muffins, ham, swiss cheese in baking/casserole dish.
  4. Pour prepared hollandaise sauce over all and bake in oven till cooked through and sauce is bubbly, about 20-25 minutes.

Recipe – Amish Friendship Bread

  • 1 ½ cup Milk
  • 2 cup Sugar
  • 3 cup Flour
  • 1 cup Oil
  • ½ tsp Baking soda
  • 1 tsp Vanilla
  • 2 tsp Cinnamon
  • 1 tsp Baking powder
  • 3 Large eggs
  • 1 Large box of instant pudding ( or 2 small boxes)
  • ½ tsp Salt
  • 3 tbsp Sugar
  • 1 tsp Cinnamon

Do not refrigerate the starter.
Day 1: Do nothing on day 1.
Day 2-5: Squeeze the bag several times throuhout the day. If the bag fills with air, burp it out.
Day 6: Add 1 cup flour, 1 cup milk and 1 cup sugar and Squeeze bag to mix.
Day 7-9: Squeeze the bag several times throuhout the day.
Day 10: Combine the batter with the 1 cup milk, 1 cup sugar, and 1 cup flour in a large non-metal bowl. Mix with a non-metal spoon. Pour 1 cup of this batter into each of the 4 1-gallon resealable bags. Give these away to friends or relatives with these instructions.

  1. To the remaining batter in the bowl, add oil, 1 cup sugar, baking soda, vanilla, baking powder, 2 cups flour, ½ cup milk, eggs, pudding and salt.
  2. In a separate bowl, mix 3 tbsp sugar with 1 tsp cinnamon and sprinkle into 2 well greased bread pans before pouring batter into the pans.
  3. Bake at 325 degrees for 55-60 minutes.

Cook’s Notes
You may make many variations of this bread. Add chocolate chips. Use flavored pudding mix. Add canned pumpkin in place of oil or apple sauce in place of oil. Add ripe bananas. Have fun and make it different every time!

  • 1 package Bacon
  • 8 Eggs
  • 1 cup Cream
  • 1/8 tsp White Pepper
  • 3/4 tsp Salt
  • 1/3 cup Green onions
  • 1/2 cup Swiss cheese
  • 1/2 cup Cheddar cheese
  • 1 9 inch uncooked pastry shell
  • Dried parsley
  • Paprika


  1. Cook bacon and chop finely. While bacon is cooking chop the green onion.
  2. Lightly beat eggs, cream, pepper and salt. Add cheese, bacon and onion and mix.
  3. Fill the pastry shell mixture. Sprinkle dried parsley and paprika on the top of mixture.
  4. Bake at 425 for 15min. Then at 300 for 30min.

Cook’s Notes
The eggs, cream and salt an pepper are the base. Add and remove ingredients to your liking!

Recipe Save – Diabetic Breakfast Smoothie

I prepare this in the evening and blend it in the morning for a quick breakfast out the door. I just put the fruit & bran in the freezer and the rest in the fridge.

  • 1/2 cup Fruit
  • 1/4 cup Bran flakes
  • 1/4 cup Ice cubes
  • 1 cup Skim milk
  • 1/2 cup Plain yogurt
  • 2 Packets of Equal
  • 1 tsp Vanilla
  • 1 Dash cinnamon
  • 1 Dash nutmeg


  1. Prepare the night before. Combine fruit, bran & ice cubes and put in freezer. Combine the milk, yogurt, sweetener and vanilla and put in the refrigerator.
  2. In the morning combine both the frozen items and refrigerated items in a blender or Magic Bullet. Add the cinnamon & nutmeg and blend until smooth.

Cook’s Notes
Cinnamon & nutmeg are optional. I prefer bananas and strawberries for the fruit and I typically buy frozen strawberries and slice ripe bananas and freeze them so I always have fruit on hand.

Recipe Save – Country Breakfast Skillet

  • 6 slices Bacon (optional)
  • 1 lb Sausage (optional)
  • 2 tablespoons Finely chopped onion
  • 6 cups Cubed cooked potatoes
  • 1 cup Shredded sharp cheddar cheese
  • 6 Eggs, lightly beaten
  • Salt and pepper, to taste


  1. Parboil or microwave the potatoes.
  2. While the potatoes are cooking, in a large heavy skillet, cook the bacon pieces &/or the sausage over moderate heat until crisp or browned. Remove the bacon/sausage to drain. Pour off all but 3 tablespoons of dripping.
  3. Heat the drippings remaining in the pan until sizzling. Add the onion and potatoes; cook, stirring gently, until the potato cubes are browned.
  4. While the vegetables are cooking, in a separate pan scramble-prepare the eggs.
  5. Once the potatoes are browned, cover with the bacon &/or sausage. Sprinkle on the shredded cheese and top with scrambled eggs. Season with salt and pepper. Serve immediately

This is a delicious cinnamon roll recipe that rises in the fridge overnight.

  • 2 cups Water (lukewarm)
  • 1 pkg Yeast
  • 1/2 cup Sugar
  • 1.5 tsp Salt
  • 1/4 cup Shortening
  • 1 Egg
  • 7 cups Flour (sifted)


  • 1/2 cup Butter, melted or softened
  • 1/2 cup Firmly-packed brown sugar
  • 1/2 cup White sugar
  • 4 tablespoons Ground cinnamon
  • Pinch of ground cloves

Night Before:

  1. Dissolve yeast in water for 5 minutes
  2. Mix yeast mixture, sugar, salt & shortening.
  3. Stir in egg.
  4. Mix in 3 cups flour.
  5. Add remaining flour.
  6. Put in well greased bowl and cover.
  7. Put in refrigerator to rise over night.


  1. Roll out on floured board.
  2. Spread the softened butter over the surface of the dough, leaving a 1-inch strip along the long edge of the rectangle furthest away from you completely dry.
  3. Generously sprinkle cinnamon-sugar over the butter, spreading the mixture evenly across the whole sheet of dough. Leave the 1-inch border free of sugar.
  4. Roll up and cut 1″ thick and put in greased pan.
  5. Let rise until double.
  6. Bake at 375 degrees for 20 minutes.
  7. Drizzle with a powdered sugar frosting or cream cheese frosting while rolls are still hot.
