Recipe Save: Corned Beef & Cabbage

Ingredients

  • 4 large carrots, peeled and cut into 2-3 inch long log-shaped pieces
  • 8 baby red potatoes, quartered
  • 1 onion, peeled and cut into bite-sized pieces
  • 4 cups water
  • 1 (4 pound) corned beef brisket with spice packet
  • 6 ounces beer
  • 1/2 head cabbage, coarsely chopped

Preparation

  1. Place the carrots, potatoes, and onion into the bottom of a slow cooker.
  2. pour in the water, and place the brisket on top of the vegetables.
  3. Pour the beer over the brisket.
  4. Sprinkle on the spices from the packet, cover, and set the cooker on High.
  5. Cook the brisket for about 8 hours.
  6. An hour before serving, stir in the cabbage and cook for 1 more hour.

Ingredients

  • 4 boxes (3-ounces each) Jello (or store brand gelatin dessert) in different colors
  • 14-oz can sweetened condensed milk
  • 2 envelopes unflavored gelatin (Knox)
  • Water

Preparation

  1. For each flavor, dissolve one box of Jello in 1 cup of boiling water. Pour into a square container that is about 6 to 8″ square and chill at least 3 hours, or overnight. (Try to use the same size for all four so that the blocks will come out the same. In this case the smaller the better – I used 8″ pans and felt my “blocks” were a little too flat.)
  2. After chilling the flavors, cut them into small blocks.
  3. Carefully mix the blocks in a 9×13-inch pan.
  4. In a separate bowl, sprinkle 2 envelopes of unflavored gelatin into ½ cup cold water. After the gelatin blooms, add 1½ cups boiling water and dissolve. Add the can of condensed milk. Stir and let cool. Pour cooled milk mixture over Jello blocks in 9×13 pan. Skim off any small bubbles that are created when you pour the condensed milk on the Jello pieces. Chill overnight or at least 3 hours until firm.
  5. Cut into blocks or shapes and serve or serve right out of the pan.

Recipe – Amish Friendship Bread

  • 1 ½ cup Milk
  • 2 cup Sugar
  • 3 cup Flour
  • 1 cup Oil
  • ½ tsp Baking soda
  • 1 tsp Vanilla
  • 2 tsp Cinnamon
  • 1 tsp Baking powder
  • 3 Large eggs
  • 1 Large box of instant pudding ( or 2 small boxes)
  • ½ tsp Salt
  • 3 tbsp Sugar
  • 1 tsp Cinnamon

Preparation
FEEDING THE STARTER
Do not refrigerate the starter.
Day 1: Do nothing on day 1.
Day 2-5: Squeeze the bag several times throuhout the day. If the bag fills with air, burp it out.
Day 6: Add 1 cup flour, 1 cup milk and 1 cup sugar and Squeeze bag to mix.
Day 7-9: Squeeze the bag several times throuhout the day.
Day 10: Combine the batter with the 1 cup milk, 1 cup sugar, and 1 cup flour in a large non-metal bowl. Mix with a non-metal spoon. Pour 1 cup of this batter into each of the 4 1-gallon resealable bags. Give these away to friends or relatives with these instructions.
BAKING THE BREAD

  1. To the remaining batter in the bowl, add oil, 1 cup sugar, baking soda, vanilla, baking powder, 2 cups flour, ½ cup milk, eggs, pudding and salt.
  2. In a separate bowl, mix 3 tbsp sugar with 1 tsp cinnamon and sprinkle into 2 well greased bread pans before pouring batter into the pans.
  3. Bake at 325 degrees for 55-60 minutes.

Cook’s Notes
You may make many variations of this bread. Add chocolate chips. Use flavored pudding mix. Add canned pumpkin in place of oil or apple sauce in place of oil. Add ripe bananas. Have fun and make it different every time!

Recipe – Honeymoon Hash (Marshmallow Fluff)

My great grandma found this recipe in the newspaper and made it for all our holiday occasions. It is a delicious marshmallow fluff.

  1. Mix salad dressing, pineapple and pimento cheese.
  2. Add marshmallows and mix.
  3. Fold in whipped topping and chill.

Ingredients

  • 2 Boxes of your favorite brownie mix**
  • 3 Extra-large (7oz) Hershey’s Symphony Milk chocolate bars with almonds and toffee

Preparation

  1. Preheat oven to 350 degrees. Prepare brownie mixes as directed on package, preparing each mix in a separate bowl.
  2. Spread one prepared mix in greased 9X13 inch pan. Top batter with candy bars (you may need to break in half to get it to fit perfectly; then top with other prepared brownie mix. Bake 1 hour and start checking the middle with knife or toothpick to ensure batter is done.  May need to cook up to 30  minutes longer.
  3. Cool completely before slicing

  • 1 15 oz Can Pumpkin
  • 1 14 oz Can Sweetened Condensed Milk
  • 2 Eggs
  • 1 tsp Ground Cinnamon
  • ½ tsp Ground Ginger
  • ½ tsp Ground Nutmeg
  • ½ tsp Salt
  • 1 9” Unbaked Pie Crust

Preparation

  1. Preheat oven to 425 degrees.
  2. Whisk pumpkin, sweetened condensed milk, eggs, spices and salt in a medium bowl until smooth. Pour intro crust.
  3. Bake 15 minutes.
  4. Reduce oven temperature to 350 degrees and continue baking 35-40 minutes or until a knife inserted 1” from crust comes out clean.
  5. Cool. Garnish as desired. Store leftovers covered in refrigerator.

Ingredients

  • 19 Ice cream sandwiches
  • 1 (12 ounce) container frozen whipped topping, thawed
  • 1 (12 ounce) jar Hot fudge ice cream topping or the topping of your preference
  • 1 cup Your favorite candy bar, frozen and broken into pieces.

Preparation

  1. Cut one ice cream sandwich in half. Place one whole and one half sandwich along a short side of an ungreased 13-in. x 9-in. x 2-in. pan. Arrange eight sandwiches in opposite direction in the pan.
  2. Spread with half of the whipped topping.
  3. Spoon topping by teaspoonfuls onto whipped topping. Sprinkle with 1/2 cup frozen candy bar pieces.
  4. Repeat layers with remaining ice cream sandwiches, whipped topping and candy bar (pan will be full).
  5. Drizzle topping on the top of dessert.
  6. Cover and freeze for an hour. Can leave in freezer for up to 2 months. Remove from the freezer 20 minutes before serving.
  7. Cut into squares and serve.

Believe it or not, this is all it takes.  Don’t add anything else!  Makes about 12 cookies.  You can double the recipe.

  • 1 cup Smooth peanut butter
  • 1 cup Granulated sugar
  • 1 Egg
  • 1 tsp Vanilla

Preparation

  1. Preaheat oven to 350°F degrees.
  2. In a medium bowl with a wooden spoon, beat peanut butter until it becomes slightly creamier.
  3. Add sugar and mix well.
  4. Finally, add the whole egg and mix.
  5. When well blended, drop by spoonfuls onto a greased cookie sheet or spray with cooking spray to prevent from sticking.
  6. Bake for about 12-15 minutes or until you see them golden brown at the bottom.

I typically substitute sugar with Splenda Blend or 50/50 Splenda and Sugar.

Ingredients

  • 1 tablespoon Lemon Juice
  • 2 cups Water
  • 6 Tart Peeled Apples*
  • 1 cup Sugar
  • 2 tablespoons Flour
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1 tablespoon Cider Vinegar
  • Butter
  • 1 Egg white

Preparation

  1. Slice Apples
    1. Add lemon juice and water to a large bowl.
    2. Peel and slice your apples, and place in bowl of lemon water. This will prevent the first apples cut from turning brown.
  2. Mix Filling
    1. In a large bowl combine sugar, flour, cinnamon, salt and vinegar
    2. Once finished the ingredients should look like a brown crumbly and powdery mixture
    3.  Drain the water off the apples and mix them with the spices and set aside.
    4. Preheat the ovent to 400 degrees.
  3. Prepare Crust
    1. You may use this recipe: http://www.mealsmatter.org/recipes-meals/recipe/82440 or premade crust.
    2. Wait to roll the crust for the top of the pie until you are actually you complete the mixture below and are ready to top the pie.
  4. Build the Pie
    1. Dump all of the apple mixture into the pie plate on top of the lower crust.
    2.  Place about 4 chunks of butter on top of the apple filling. This will give the filling rich flavor.
    3. Cut long strips of tinfoil and place them around the edge of the pie. This will prevent the crust’s edge from burning while it bakes
  5. Baking the Pie
    1. Place a cookie sheet covered in tinfoil on the lowest oven rack to prevent any overflow from reaching the bottom of the oven — easy cleanup!
    2. Bake the pie for 40-50 minutes at 400 degrees.
    3. Remove pie from the oven, remove the foil and brush a small portion of egg white on the top for a golden glossy effect.
    4. Cook for an additional 10 minutes.
    5. Remove from oven and allow to cool for 1-2 hours to ensure that the apples thicken and the pie isn’t to watery.

* I typically use 3 granny smith and 3 honeycrisp, mutsu or pink lady apples.

DOUGH:

  • 2 cups Water (lukewarm)
  • 1 pkg Yeast
  • 1/2 cup Sugar
  • 1.5 tsp Salt
  • 1/4 cup Shortening
  • 1 Egg
  • 7 cups Flour (sifted)

CINNAMON FILLING:

  • 1/2 cup Butter, melted or softened
  • 1/2 cup Firmly-packed brown sugar
  • 1/2 cup White sugar
  • 4 tablespoons Ground cinnamon
  • Pinch of ground cloves

Preparation
Night Before:

  1. Dissolve yeast in water for 5 minutes
  2. Mix yeast mixture, sugar, salt & shortening.
  3. Stir in egg.
  4. Mix in 3 cups flour.
  5. Add remaining flour.
  6. Put in well greased bowl and cover.
  7. Put in refrigerator to rise over night.

Morning:

  1. Roll out on floured board.
  2. Spread the softened butter over the surface of the dough, leaving a 1-inch strip along the long edge of the rectangle furthest away from you completely dry.
  3. Generously sprinkle cinnamon-sugar over the butter, spreading the mixture evenly across the whole sheet of dough. Leave the 1-inch border free of sugar.
  4. Roll up and cut 1″ thick and put in greased pan.
  5. Let rise until double.
  6. Bake at 375 degrees for 20 minutes.
  7. Drizzle with a powdered sugar frosting or cream cheese frosting while rolls are still hot.
